Herbal Tea Recipes


Herbal Teas

Aren't Herbal Teas great? No calories, they are amazingly good for us and can taste great!

You can use fresh or dried herbs for teas, and you'll be amazed at how much better your own taste compared to supermarket ones. Its called freshness!

  • Pour 2 cups of boiling water over the herbs and allow them to steep or infuse (soak) for 5 min.
  • Strain the mixture if not using a Heat Sealable Tea Bag
  • Sweeten lightly with a few Stevia Leaves or a few drops of Liquid Stevia or some Honey, if desired.


Apple & Chamomile Winter Warmer

1 cup dried chamomile flowers
1 cinnamon stick
2 cloves
3 green Cardamom Pods (optional)
1/2 - 1 unpeeled apple (I like Granny Smiths but any apple is fine)

This will provide a litre of tea so I like to prepare the dry ingredients in a pretty jar and have them ready to infuse and then I just add the fresh apple.

Place all ingredients into glass plunger or pyrex jug. Pour boiling water over and allow to infuse for 5 minutes or so. This can be a little spicy if you leave it too long infusing. A little honey may be added to taste when serving.


Apple, Mint & Clove Tea

This is wonderful served hot or chilled in summer.

1 handful of fresh old fashioned mint or apple mint
2 cloves
1 unpeeled Green Apple - cored and sliced

Place all ingredients into glass plunger or pyrex jug. Pour boiling water over and allow to infuse for 5 minutes or so. This can be a little spicy if you leave it too long infusing. A little honey may be added to taste when serving.


Comforting Tea

2 parts Peppermint
1 part Lemon Balm
2 parts Chamomile Flowers


Lemon Chiller

For a delicious chilled drink, strain after 10 minutes, chill and add lemon juice and ice cubes.

3 parts Lemongrass
2 parts Lemon Balm Leaves
2 parts Borage Leaf
2 parts Lemon Peel


Lemon, Catnip & Chamomile

Catnip is not just for cats! Our cats, however prefer theirs dried and not in a tea!! :o) Catnip is soothing and calming and we have three catnip teas I have created that I love. Lovely hot or chilled.

1/2 cup dried Catnip
3/4 cup dried Chamomile Flowers
1 cup dried Lemon Balm
1/4 cut dried Mint or Lemon Mint
1/3 cup dried Lemongrass

Mix herbs together throughly and store in an airtight jar. In our small herbal teabags I use a rounded teaspoonful per bag for one cup. If you are using a teapot, just one teaspoon per serve and one for the pot! Pour boiling water over and infuse for 5 minutes and your tea is ready to drink!


Catnip & Chamomile Soother

This is a lovely calming blend for the evenings or for when you've just had ENOUGH!

1/2 cup Dried Chamomile flowers
1/2 cup dried Catnip
1 cup dried Lemon Balm

Mix herbs together throughly and store in an airtight jar. In our small herbal teabags I use a rounded teaspoonful per bag for one cup. If you are using a teapot, just one teaspoon per serve and one for the pot! Pour boiling water over and infuse for 5 minutes and your tea is ready to drink! You may wish to add a little light honey for taste.


Bedtime Tea

2 parts Chamomile Flowers
2 parts Lemon Balm Leaves
1 parts Liquorice or Aniseed or Fennel
1 part Catnip Leaves

Mix herbs together throughly and store in an airtight jar. In my small herbal teabags I use a rounded teaspoonful per bag for one cup. If you are using a teapot, just one teaspoon per serve and one for the pot! Pour boiling water over and infuse for 5 minutes and your tea is ready to drink! You may wish to add a little light stevia for taste.


Herbal Tea for Indigestion

1 teaspoon fresh Catnip
1/2 teaspoon fresh Fennel
1/2 teaspoon of fresh Lemon Balm

Pick the fresh herbs and pour 2 cups of boiling water over them and allow to infuse for 5 minutes. Remove the herbs and sweeten with a little light honey if desired. Allow to cool a little, and then sip this slowly to help ease discomfort from indigestion and bloating.

Athole Brose

I have to admit this is not an invention of mine through trial and error! If it had been, I probably wouldn't have been able to remember the recipe!!! I found this on a recent trip to Scotland, one of my favourite places on earth, and the ingredients are so fascinating I thought I would include it for you! Don't say you weren't warned!

This is a warming Scottish drink for Adults! A Brose is a traditional Scottish dish made by pouring hot water over oatmeal.

1/2 cup medium Ground Oatmeal
3 1/2 cups boiling water
1 Apple, peeled, cored and sliced thinly
20g of dried Mullein
1 1/2 tablespoons of Scotch Whiskey
a little Honey to sweeten your brew

Put all the dry ingredients into a large pyrex container or jug. Stainless steel can be used if preparing a large quantity. Pour over the boiling water and let it steep until it cools enough to drink. Strain through muslin or a fine strainer. Adjust the strength by adding more hot water and then add the scotch whiskey and sweeten with honey.

It may also be served chilled. "Slainte" !!!
